My favorite way to prepare green beans is to blanch them first then saute them in garlic and olive oil (see my recipe for Green Beans with Garlic and Butter). French Green Beans with Potatoes and Onions, I think, is my second favorite green bean dish. We picked up a 2 pound bag of French green beans at Costco this week, and since the beans are ever so slightly sweet, we decided to cook them with potatoes, onions, and bacon (everything is better with bacon). Plus, I didn’t have to spend hours snapping off both ends of the beans.
I usually serve French green beans as a side dish with pork chops or pork roast. To make French green beans with potatoes and onions, start by frying the bacon – 4 strips, chopped. Saute about one cup of chopped onions in the bacon drippings. Add about 2 pounds of French green beans, 6 red potatoes (quartered), and 2 cups of water. Mix together, then generously salt. I find that I still need to add more salt while the beans are cooking. Sometimes I don’t add bacon, and other times I use chopped ham, ham hocks, or smoked turkey bones. I like to fix the beans, too, without any meat. If you don’t want to use meat, saute the onions in about 2 tablespoons of extra virgin olive oil. My daughter sometimes substitutes the water for broth, but I generally stick with the water.
Cover the beans, and cook over medium heat for about 25 minutes. I usually reduce the heat to medium-low once the beans start to turn a darker color. Cook for about 20 more minutes, or until the beans are cooked and the potatoes are tender. French green beans with potatoes and onions make for good leftovers, too.
French Green Beans with Potatoes and Onions Recipe
- 4 slices of bacon
- 1 cup chopped onion
- 2 pounds French green beans
- 6 red potatoes
- 2 cups water
- salt and pepper
- Chop bacon and saute until crispy. Add onions; cook until translucent.
- Add water, green beans, potatoes. Generously salt. Cover, cook over medium heat for 25 minutes. Reduce heat to low and cook for an additional 20-25 minutes. Adjust seasoning as needed.
