Ingredients

For the marinated chicken

  • 2 large chicken breasts
  • 3 cloves minced garlic
  • 4 tablespoons lemon juice
  • 1/3 cup extra virgin olive oil
  • coarse sea salt
  • 1/2 teaspoon chopped rosemary

For the salad

  • 2 cups chopped radicchio
  • 4 cups chopped Romaine lettuce
  • 1/2 cup chopped red onion
  • 1/4 cup shelled unsalted pistachios
  • 1/2 cup garbanzo beans
  • 1/3 cup crumbled Gorgonzola
  • 1/2 cup chopped roasted red peppers
  • 1/2 cup chopped tomatoes
  • 1/3 cup chopped olives

For the dressing

  • 1/3 cup extra virgin olive oil
  • juice of half a lemon
  • 1 teaspoon granulated garlic
  • salt and pepper

Instructions

  • Marinate the chicken in oil, lemon juice, minced garlic, and coarse sea salt for several hours. Grill or roast until cook through and tender. When cool, chop into bite size pieces.
  • Make the salad dressing by mixing together 1/3 cup extra virgin olive oil, juice of half a lemon, granulated garlic, salt and pepper.
  • Toss together the remaining ingredients with the salad dressing.
