This is a quick and easy side dish that showcases zucchini. My grandma made stewed zucchini when my dad was growing up. He’s not sure exactly how she made it back then, but he believes his recipe is a close second.

Stewed Zucchini Recipe
Ingredients
- 4 tablespoons olive oil
- 1 small onion diced
- 3 small zucchini cut into bite size pieces
- 1 can 14.5 ounce Italian style diced tomatoes
- 1 cup water
- 1 teaspoon garlic powder
- salt and pepper to taste
- grated Parmesan cheese
Instructions
- Heat the oil in a medium saucepan over medium heat. Add onion and sauté for 2-3 minutes. Add the zucchini, tomatoes, water, salt, pepper, and garlic powder.
- Cook for about 20 minutes or until zucchini is tender. Adjust salt as needed. Serve with Parmesan cheese.
