If you’ve ever eaten at a Japanese teppanyaki or hibachi grill (Makoto and Kobe are two good places), then you more than likely had ginger dressing on your salad. Freshly grated ginger with a hint of rice wine vinegar and soy sauce can liven up a tossed salad. My dad likes it so much that he came up with his own recipe for ginger dressing.
Dad’s ginger dressing is simple to make. Mince the onion and ginger, and add them along with the remaining ingredients to a blender jar or food processor bowl. Pulse until ingredients are well-blended. The ginger dressing is great on salads, but it can also work as a dipping sauce for fresh or fried vegetables and batter-fried or panko coated seafood. Add a little ginger dressing to your favorite stir fry or fried rice recipe and change it up a bit. It’s addicting.
