My dad and I have been busy since we got up this morning. We started the day with a trip to the produce market where I picked up an imported bag of large rigatoni, a small package of baby zucchini, and a stick of pepperoni. Then we stopped at Publix on the way home, and I bought 6 dozen eggs for Easter baking and coloring.

While 3 dozen eggs were boiling, I made Funfetti cupcakes with my grandson. He likes to cook with me just as long as he is the appointed taste tester.

We made 48 cupcakes, which felt like it took hours. My mom only has a pan that holds six cupcakes, so I had to fill it eight times to bake all of them. I didn’t have to worry about the taste; my grandson took care of that for me.

While the cupcakes were baking, we made the pie crust dough for the Easter Rice Pie and the Ricotta Cheesecake, and later, we made the dough for the Easter Sweet Bread. At some point in the afternoon, we frosted the cupcakes, but by then the “fetti” fell victim to the taste tester leaving some plainly frosted while others were scarcely decorated.

If that wasn’t enough, we colored 3 dozen eggs; stuffed candy in 96 plastic eggs; made enough dough for 4 pizzas, which we ate for dinner; whipped up the filling for the rice pie and ricotta cheesecake; bought the last few things for tomorrow’s dinner; and, drank a lot of wine. We’ll have our immediate family here tomorrow, 30 people or so, and a large feast. (Yes, I know my mom swore it wasn’t going to happen this year.) Our backs are broken, and our legs hurt. We haven’t started yet on tomorrow’s meal, so it will be an early start. Oh yeah, we will at some time before the morning make up Easter baskets for the kids.
