I stumbled upon a Wilton Step-By-Step Bunny Pan in Walmart today, and I just had to have it. My grandkids are staying over tonight, so I thought this would be a good project for us. I never learn my lesson.
My granddaughter dipped the cake batter from the bowl in cupfuls right before she sucked most of the pink icing gel from the tube, just before dredging her slice of pepperoni pizza through the icing, leaving me with not much of anything for decorating. I had a bag of jelly beans stashed, but my grandson ate through the bag faster than I could pick out the black and pink beans for the eyes and nose. Then, while he was chomping on the whiskers, and feeding the dog the last of the jelly beans, he pointed out my flaws in decorating. Several times, in fact, before adding that our bunny cake did not look like the bunny on the product label. Still, he said he liked it.

Bunny Cake Recipe
Ingredients
For the cake
- 1 Wilton bunny cake pan
- baking spray
- 2 1/2 cups sifted cake flour
- 1 2/3 cups granulated sugar
- 3/4 cup soft shortening
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1 cup whole milk
- 5 egg whites unbeaten
- 1 1/2 teaspoons clear vanilla
For the buttercream frosting
- 1/2 cup unsalted butter softened
- 1/2 vegetable shortening
- 1 teaspoon clear vanilla
- 4 cups powdered sugar
- 2 tablespoons milk
- pink and black jelly beans
- black licorice
- red and white salt water taffy
- pink decorating gel
Instructions
- To make the cake: In a large bowl, sift together dry ingredients. Add shortening and milk, and beat with an electric mixer until blended. Add egg whites, one at a time, beating on low speed. Add vanilla, and stir. Bake at 350°F for 25-30 minutes, or until a cake tester inserted into the center comes out clean. Cool in pan for 5 minutes, then remove cake from pan and cool on wire cake rack.
- To make the frosting: In a large bowl, beat butter and shortening with electric mixer. Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add milk and beat at medium speed until light and fluffy. To thin for icing cake, add a small amount of light corn syrup.
- Use a spatula to apply the frosting to give the bunny a fluffy look. Use licorice for the whiskers and jelly beans for the eyes and nose. Knead together white and pink salt water taffy. Roll out and cut taffy with granulated sugar on a smooth surface, cut with scissors to make shape for inside of ears and position.
