Another way to prepare broccoli. When I was growing up, we never drowned vegetables in melted butter. That happened after I was an adult. Mom and dad make an oil and vinegar dressing for most of their vegetables, something my grandmother Lily did when my dad was growing up. Whenever we had broccoli or cauliflower, it was prepared as a “salad” by first steaming the vegetables, and then dressing them in oil and vinegar.

Broccoli Salad
Ingredients
- 1 small head of broccoli
- 1 teaspoon salt
- ¼ teaspoon pepper
- ¼ teaspoon garlic powder
- 3 tablespoon extra virgin olive oil
- 2 tablespoon red wine vinegar
- 6 ounces water
Instructions
- Cut broccoli into several different pieces. Wash thoroughly. Put about 1 inch of water in a pot. Place steamer basket in pot and add broccoli pieces; cover. Let water come to a boil; steam broccoli for 8 minutes. Remove from pot and cool.
- Add the pepper, garlic powder and more salt if needed, then add the vinegar, olive oil and water.
How interesting! When I read the heading of salad, I assumed it would be raw. I’ll have to give this a try. I’m nursing and supposed to avoid raw broccoli and cauliflower – this would be perfect. Thanks.
