What can I say about beans and franks? It’s a dish that feeds the masses. When my dad was growing up, his mother often made beans and franks and creamed corn on Friday nights. (Not very Italian). They sopped up the juice with Italian bread (okay, maybe a little Italian). Kids love beans and franks. It’s quick and easy, and it’s good comfort food.
Beans and Franks Recipe
- 1 small onion chopped
- 6 frankfurters cut into bite size pieces
- 2 tablespoons olive oil
- 3½ cups pork or baked beans if using canned beans, use 28 ounce can
- Heat the oil in a medium size skillet. Add the onions and sauté for about 2 minutes. Add the frankfurters and sauté for another 2-3 minutes. Add the beans and cook for 6-8 minutes more or until well blended.
