Sweet Potato Burgers

Ingredients

  • 200 gr (1 big) sweet potato
  • 1/2 cup walnuts
  • 2 tbsp flax meal
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 onion
  • salt & pepper
  • sesame seeds for rolling
  • 6 small buns

Instructions

  1. Rinse the sweet potatoes.

  2. Steam them for 20 minutes or until a knife passes easily through the center.

  3. Remove from the heat and rinse in cold water. Peel.

  4. Put the sweet potato in a potato ricer and mince it in a large bowl.

  5. Cube the onion finely and add it to the sweet potato.

  6. Season with all the spices and add the flax meal. Stir and set aside to bind.

  7. Take a handful of the mixture and roll it into the sesame seeds. Rinse and slice the other vegetables and assemble the burger. Enjoy with a homemade mayo or mustard on the side.
