My grandmother made soup beans, or pinto beans, a few times a week when my mom was young. She always served soup beans with cornbread, raw onion, and fried potatoes.
Soup Beans Recipe
- 1 one pound bag dried pinto beans
- 6 cups water
- 2 ham hocks or leftover ham pieces
- salt and pepper to taste
- Wash and sort pinto beans, discarding discolored beans and stones.
- Fill stock pot with 6 cups of water; add beans, ham hocks, salt and pepper. Cover, and cook on medium high heat until the beans come to a boil. Reduce heat to low, and simmer for 3-4 hours or until the beans are tender. Adjust salt as needed.
