This is a side dish for potato lovers. A little olive oil and a hot oven produces beautifully roasted potatoes. What else could one ask for?
Roasted Potatoes Recipe
- ¼ cup olive oil
- 8 small red potatoes
- salt & pepper
Preheat oven to 375°F. Put olive oil in oven proof skillet or pan.
Cut the potatoes in half and add to pan with cut side up. Salt and pepper. Turn potatoes over so cut side is down. Adjust seasoning.
Bake for about 45 minutes or until cut side of potato is brown.
