This is a side dish for potato lovers. A little olive oil and a hot oven produces beautifully roasted potatoes. What else could one ask for?
Roasted Potatoes Recipe
- ¼ cup olive oil
- 8 small red potatoes
- salt & pepper
- Preheat oven to 375°F. Put olive oil in oven proof skillet or pan.
- Cut the potatoes in half and add to pan with cut side up. Salt and pepper. Turn potatoes over so cut side is down. Adjust seasoning.
- Bake for about 45 minutes or until cut side of potato is brown.
