Meatball Subs


We usually make meatballs subs a day or two after we have Sunday pasta, and a few meatballs are left over. That’s not entirely true; we make enough Sunday pasta and sauce to feed a small family of twenty, so we’re sure to have leftovers for meatball subs.  This dish only takes a few minutes to put together; add a salad to make a complete meal.

Meatball Sub Recipe

Serving Size: 1 sub

Ingredients

  • 20 meatballs
  • 4 sub rolls
  • ⅔ cup Sunday or Marinara sauce
  • ½ cup parmesan cheese

Instructions

  1. Cut sub roll in half but not all the way through. Spread 2 tablespoons of sauce on the sub roll then add 4-5 meatballs. Add another tablespoon of sauce. Sprinkle with 2 teaspoons parmesan cheese.
