My grandmother made meat stuffing for the holidays when my dad was growing up. It never caught on with our family so we didn’t eat it when we were kids. When I met my wife Charlene she brought it back to our holiday table. She is from a small town in Massachusetts, just up the road from Rhode Island, so I think that this is probably quite similar to grandmother’s meat stuffing. My wife Charlene makes this dish for both Thanksgiving and Christmas dinner.
Use a hand masher to mash the cooked potatoes. Add the rest of the ingredients and mix. Store-bought chicken or turkey broth is acceptable, but it’s better with the fresh turkey drippings.
- 1 pound ground beef
- 4 large potatoes
- 1 small onion minced
- ½ teaspoon salt
- ¼ teaspoon pepper
- ½ teaspoon poultry seasoning
- ¼ teaspoon ground cloves
- ½ cup turkey drippings
- Brown the ground beef with the minced onion. Drain the grease.
- Peel and chop the potatoes then boil until fork tender. Drain the potatoes and mash with a hand masher. (Do not add anything to the potatoes while mashing.)
- Combine the ground beef mixture with the potatoes and seasonings. Add the turkey drippings and mix with a wooden spoon. Adjust seasoning as necessary.
