
Macaroni salad is a staple in our house. We serve it all barbeques and family outings, or when we’re making quick and simple meals.
It’s a versatile dish, too. Add your favorite vegetables, seafood, or fruit and serve it as the main entrée.
Ingredients
- 2 cups dry elbow macaroni
- 3 quarts water
- 1 teaspoon salt
- ½ cup celery, diced
- ½ cup carrots, diced
- ⅓ cup onion, diced
- ½ cup green pepper, diced
- ½ cup red pepper, diced
- 1 cup mayonnaise
- Salt & pepper to taste
- Fresh parsley, chopped , for garnish
- 1 recipe basic Macaroni Salad
- ½ pound cooked popcorn shrimp (fresh or frozen or canned)
- ¼ cups raisins
- ¼ cups shredded coconut
- 1 recipe basic Macaroni Salad
- 1 can tuna, drained and separated

Instructions
- Bring about 3 quarts of water and 1 teaspoon salt to a boil in a medium sized pot. Cook until macaroni is al dente, about 7-8 minutes.
- Remove from heat, drain, and cool. Add diced vegetables to the cooled macaroni. Add the mayonnaise and mix well. Salt and pepper to taste. Garnish with the fresh parsley. Chill completely before serving.
- Make Basic Macaroni Salad and add raisins, coconut, and shrimp to mayonnaise.
- Make Basic Macaroni Salad and add tuna to mayonnaise.
