It’s summer, and here in Florida it’s time for outdoor fun. What better snack to pack in your cooler than peanut butter, bananas, and graham crackers? Graham cracker delights was one of my favorite snacks growing up. Whenever I eat one, I think of the road trips to Tennessee and Rhode Island that we made when I was younger; my two brothers and I packed into the backseat of a Ford Galaxy 500, washing down bologna sandwiches and graham cracker delights with a thermos full of Kool-Aid. This simple recipe has been in our family for generations, and none of us knows its source. As early as the 1940s, my great Aunt Victoria would bring a batch with her when she visited my mom’s family, or she would serve them when my mom’s family visited her.
Graham Cracker Delights Recipe
- 2 ripe bananas
- 1/2 cup creamy peanut butter
- 16 graham cracker sheets
In a medium mixing bowl, smash bananas until smooth. Add peanut butter and mix well.
Spread 3 or 4 tablespoons on 8 of the graham crackers. Cover each with the remaining crackers, forming a sandwich.
Wrap graham cracker delights in aluminum foil, not more than two each. Refrigerate for several hours or overnight, until the graham crackers are soft.
