One memory I have of Rhode Island is that everyone drank coffee and they drank it all of the time (Dunkin Donuts coffee, too). A coffee cabinet is a popular drink that’s unique to Rhode Island, that is, next to Del’s Frozen Lemonade. It’s a coffee milkshake made with coffee ice cream, coffee syrup, and cold strong coffee—a perfect drink on a hot summer day. If you can’t find coffee syrup in your area, you can make it by mixing simple syrup with brewed coffee. Coffee Cabinet Recipe
- 1 pint coffee ice cream
- 1/2 cup cold strong coffee
- 2 tablespoons Autocrat Coffee Syrup
- whole milk optional
- Add ingredients to blender and blend on smoothie setting, or until ingredients are mixed well.
For a thinner shake, add 1/2 cup cold whole milk, then blend.
