Chicken salad is one of those dishes that I use whatever ingredients I have on hand, that is, with the exception of the chicken. It’s a dish that makes good use of leftover roasted, stewed, baked, barbecued, and fried chicken. The flavors of the leftover chicken and the variety of ingredients you add to this dish significantly change the taste of the chicken salad. My mom likes to add apple and celery to her dish.
- 3 cups chicken, shredded or chopped (use leftover roasted or stewed)
- 1 cup celery, diced
- ½ cup apple, peeled & diced
- 1 cup mayonnaise
- Salt & pepper to taste
- In a large bowl, add shredded or chopped chicken, celery, apple, and mayonnaise. Mix well. Add salt and pepper to taste. Serve as a sandwich, stuff a tomato, or add to a salad.
